I know sounds simple, but it’s a great snack – high in fiber, and oh ya; delicious!! Get yourself a bag of Organic (no GMO) popcorn kernels. Grab your largest saute’ pan & here is your list of ingredients/instructions:
1 TBSP. Organic (preferably extra-virgin) Coconut Oil (place in pan/spread over whole pan) and turn to Medium-High
3 popcorn kernels (put in pan) and cover, once those kernels pop, put in
1/2 cup of kernels, cover, but leave lid ajar for steam to escape.
Shake & rotate pan often to get all kernels popped. It is done when you have 2-3 seconds between pops.
Now this is delicious all on its own, you get a faint coconut flavor, delicious & super healthy on its own. (This is often a playdate snack for my kids – plain)
If you want to add some fun flavors:
My Personal Favorite, 3 TBSP. butter (gluten-free – I like Best Life), 3 TBSP. grated parmesan cheese, and 1 tsp. garlic, or sea salt (shake it up & serve) Yummy!
Bacon? – Yes, please! Cook up some bacon (preferably turkey bacon), crumble up & shake w/popcorn.
Chocolate/Caramel: 1 1/2 TBSP. Fleur de Sel Caramel Sauce (Trader Joe’s has a gluten-free) & 1/4 cup gluten-free chocolate chips (Either Enjoy Life, which I believe are also Vegan, or again; Trader Joe’s – much more cost-effective) Melt down chips slowly, heat up caramel in microwave, pour over popcorn w/some melted butter; Oh my goodness; you want a sweet treat, this is it!!
I personally love popcorn as a snack & cooking it on the stove top does take longer, but it tastes so much better. So if you enjoy it as much as me & want it as healthy & unprocessed as possible, this is the way to go! Make a bunch ahead of time, store in a cool, dry place in a brown paper bag, you’re good to go when you get the craving. Of course store it w/no toppings on it if you want it to last.
